Roasted Garlic Potato Soup
Yield: 4 servings
Ingredients

medium red potatoes, cubed

medium carrots, diced
|
|
|

medium onion, chopped
|
|
|
| 1 |
stalk |
celery, chopped
|
|
|
| 2 |
|
strips bacon, cooked and crumbled
|
|
|
| 2 |
cans |
(14 oz. each) chicken broth, seasoned with roasted garlic
|
|
|
| 1 |
cup |
milk
|
|
|
| 1 |
cup |
instant mashed potato flakes or buds
|
|
|
| 1 |
tablespoon |
fresh parsley, chopped
|
|
|
Directions:
Place potatoes, carrots, onion, celery, bacon and broth in saucepan. Heat to a boil. Cover and cook over low heat 15 minutes or until tender. Remove from heat.
Stir in milk, potato flakes and parsley. Heat through.
