Crispy Goblin Chips

Yield: 4-6 servings

Ingredients

1/4 cup granulated sugar
1 teaspoon ground cinnamon
1 large sweet potato, cut into 1/16 inch- slices
Vegetable oil

Directions:

Combine sugar and cinnamon in small bowl; set aside.

Using cookie cutters, cut out jack-o-lantern faces from potato slices, if desired. Place oil in large deep skillet, filling about half way.

Heat oil to 350 degrees on deep fry thermometer. Carefully place potato slices in hot oil in single layer; fry 2 to 3 minutes or until crispy.

Remove from oil; drain on paper towels. Sprinkle with cinnamon sugar mixture. Repeat with remaining potato slices.
